Grilled Banana Flounder
Ingredients
4 5- to 6-ounce flounder fillets
2 tsp salt
2 tsp ground black pepper
Juice of 2 limes (can substitute lemon juice)
4 tsp butter
4 slices bacon
4 ripe bananas, peeled and mashed
2 sprigs fresh parsley, finely chopped (can substitute fresh cilantro)
A few dashes of Chili Willy hot sauce
Directions
1. Sprinkle flounder with salt and pepper and place in a shallow pan.
Pour lime juice on top and marinate for 30 minutes, covered in fridge

2. Preheat outdoor grill or heat oven to 375 degrees. Tear off 4 generous strips aluminum foil, large enought to wrap fillet and spread 1 tsp butter on each.

3. Remove fillets from marinade. Place one strip bacon on each sheet of foil, and spread about half of a mashed banana on top. Place a fish filet over this and add onother half of mashed banana. Sprinkle with parsely and a few dashes of Chili Willy hot sauce and cover with foil, leaving top loose.

4. Grill or bake fish for 15 to 20 min, checking occasionally. Open the top of the foil for the last 5 minutes
