Melt the butter in a sauce pan over medium heat. Add the flour and spices, whisking briskly. Allow to cook until pasty. Slowly add the cream, whisking constantly. Bring to a low boil. Add the cheese, whisking constantly. Be patient, because the cheese may clump, but if you keep working it, stirring, stirring, stirring, it becomes a wonderful creamy, delicious sauce.
Serve over pasta or fresh cooked vegetables.
